Download a copy of Stewart's Puzzle Craft books. Both the '85 and the '92 versions can be found in pdf format at http://www.puzzleworld.org/PuzzleWorld/art/articles.htm.  Here you can find some easy to make puzzles like pentominoes, Coffin's Half Hour, and several other puzzles based on cubes.

От игры к знаниям (pronounced as 'Ot Igry k Znaniyam' and to be translated: 'From Games to Knowledge'): maybe not of general interest, but a 'nice to know/have' Russian book by Efim Markovich Minskin the author of 'Pionerskaya Igroteka' (cf. Stewart Coffin's 1985 edition of Puzzle Craft). In fact the contents of both these books are pretty much the same:

Of course you can download the other book as well, but that one is more about outdoor games and contains very few puzzles.

Sliding Piece Puzzles by Edward Hordern: Out of print for many years now, but still 'the bible' for all sliding block puzzle enthousiasts. Extremely hard to find and if you ever come across a copy be prepared to pay some $300 (or much more).
